To further sequester the monks from the temptations of society. Also, if you were a monk in Tibet, you wouldn't have a lot of options.

I'm not a pro on that subject, so it's to take as is, but as for Europa, monestaries built more than a few centuries ago are little fortress, so monk can protect themselves against various attacks. And there are few places more secure against attack than a cliff : difficult access, high place.
